This year I have started a new tradition that I picked up from Life as Mom: the Christmas Countdown. Every day until Christmas we have a special holiday-related activity to get ready for Christmas: some items include setting up the nativity, watching holiday movies, shopping for Toys for Tots, and looking at Christmas lights. On Monday, our Christmas Countdown activity is eating dinner backwards. That means dessert first followed by the entree and sides, and ending with salad. I think Kate will like that, especially since I have a special strawberry cake in the fridge: my Mema's recipe.
Our menu plan, including breakfasts and lunches, for the week is as follows:
Breakfast
Cinnamon pancakes (from the freezer)
Oatmeal with fruit
Yogurt, granola, & fruit
Scrambled eggs with cheese & salsa
Lunch
Turkey & cheese sandwiches or roll-ups
Bean & cheese quesadillas
Leftovers
Dinner
Sunday: Leftovers for lunch; Rib-eye Steaks with Mushroom-Onion Sauce, Broccoli & Cheese, and Corn
Monday (Dinner Backwards): Dessert--Mema's Strawberry Cake, Roasted Herb Chicken with Carrots & Potatoes, then Salad
Tuesday: Spaghetti with Meat Sauce, Salad, & Whole Wheat Breadsticks
Wednesday: Dinner at Kate's Mother's Day Out/Christmas Program
Thursday: White Beans & Cornbread
Friday: Pizza Night!
Saturday: Christmas Party!
