Menu Plan for the Week of August 14th


This weekend I am at "Imagine," the Women of Faith conference, down here in Atlanta, Georgia. What an amazing opportunity this has been! Staying in a luxurious hotel, listening to super-talented Christian women speakers and performers, not having to cook or clean, and even eating dinner at Ruth Chris' Steak House last night. There are no words.

So, you see I was a tad reluctant to even think about our menu plan for the coming week because, well, that means thinking about cooking and cleaning and all that fun stuff that I much prefer someone else doing. Still, since the new week is upon us and because we must return to reality today as we head back home, here's what we'll be eatin':

Sunday Lunch: Leftover spaghetti or chili that I fixed last week for Daniel and Kate {hoping there's some left!}; Dinner: Grilled chicken with sweet potato fries and salad

Monday: Chicken enchiladas (with a homemade enchilada sauce that is out of this world!) {I'll have to post it one day :)} with lettuce and tomatoes

Tuesday: Breakfast for Supper-- Sausage links, veggie frittata (with whatever vegetables I have on hand), hash browns, and biscuits with homemade blueberry jam

Wednesday: White beans, sliced tomatoes, and hoecakes

Thursday: Light dinner for baby & me {Daddy-Daughter Date Night at Chick 'Fil A}

Friday: Pizza night!!

Saturday: Cheeseburgers and tater wedges with homemade ketchup
