Menu Plan for the Week of July 10th


Continuing with our Summertime Pantry Challenge, we will be eating primarily what we have available in our cabinets and freezer as well as from the garden and local farmer's markets. I finally got on Pinterest and, wow, I love it! I found some of my new recipes on there, and I am excited to try them out!

Here's what we'll be eating the week of the 10th:

Breakfast
Whole wheat chocolate chip muffins & fruit
Oatmeal with fresh berries
French toast (from the freezer)
Eggs & cheese toast

Lunch
Chili (from the freezer)
Hummus & pita bread
Grilled cheese & chicken-vegetable soup (from the freezer)
Black bean quesadillas

Supper

Sunday: Chicken & dressing with extra roasted chicken (from the freezer), green beans, and Ina Gartin's Creamy Cucumber Salad

Monday: Pasta with eggplant, portobellas, & tomatoes with garlic bread (baguette from freezer)


Tuesday: Shrimp tacos with fresh mango-avocado salsa

Wednesday: Lentil hummus, pita bread, tabbouleh, and sauteed eggplant with Greek yogurt



Thursday: Tortilla & black bean pie (from The Whole Foods Cookbook) with fresh salsa

Friday: Pizza Night!!

Saturday: Leftovers

I also plan to make some more granola and yogurt this week.
