Menu Plan for the Week of July 3rd

In light of the Summertime Pantry Challenge, we will be doing a large part of our eating from the stockpiles of our pantry, refrigerator, and freezer as well as fresh produce from our garden and the local farmer's market.

We went to the farmer's market on Friday where we bought carrots, Ginger Gold apples, Swiss chard, and a half dozen ear of corn. I made some yummy cinnamon applesauce for Cora with the apples, and Kate and I ate two ear of the corn for lunch. We also have quite a bit of squash, lettuce, peppers, and cucumbers in our own garden that we'll be eating on.

Here's what we plan to eat this week:

Sunday: Comfort meatballs (from the freezer) on brown rice and Swiss chard with fresh corn & balsamic vinegar

Monday (4th of July): Smoked baby back ribs; potato salad; roasted corn; cucumber, tomato, & onion salad; and mixed berry trifle

Tuesday: Chicken Souvlaki Gyro Style with Tzatziki (cucumber sauce) and pita bread

Wednesday: White beans & kale (from the freezer) with cornbread

Thursday: Steak fajitas (grilled steak from the freezer) with refried beans, fresh salsa, and corn tortillas

Friday: Pizza Night!

Hamburgers, sweet potato fries, and salad
